One of my favorite food to make when we have leftover rotisserie chicken in the fridge is the Chicken Tostadas. It's very easy to make, you don't even have to cook it, with just few ingredients and you're all set for the dinner.
My husband and I loves Mexican foods. I mean who doesn't love it? It's so good!
I will put the recipe on the bottom of this post so you guys can try to make it too. If you can find Smoked paprika in your store, that will be awesome because it will give your Chicken Tostadas, grill like flavor with no cooking.
Easy Chicken Tostadas Recipe
Ingredients:
2 cups shredded boneless, skinless rotisserie chicken
1 tablespoon lime juice
1/4 teaspoon smoked paprika
Corn Tostada shells
Preparation:
Place chicken, lime juice and smoked paprika in a medium bowl. Mix it and toss well to combine.
Spread about 1 tablespoon guacamole over tostada shell, top each with 1/4 cup chicken and about 2 tablespoon salsa.
Top with Mexican cheese.
Enjoy. Thanks for stopping by!
