Ingredients
Lasagna Noodles:
Zucchini sliced thin with mandolin
Cheese:
1 cup pine nuts
.5 tablespoons lemon juice
1 tablespoons nutritional yeast
1/2 yellow pepper
1 tablespoons fresh parsley
1/2 tablespoon fresh thyme
1/4 teaspoon salt
1/4 cup water as needed
1½ cups Sunflower Seeds
1¼ cups Kale, or Spinach
½ cup Water, as needed to thin
1 Lemon juiced
1 Garlic clove
2 tbsp Shallot, diced
1½ tbsp Nutritional Yeast
Salt & black pepper, to taste
Marinara:
1/2 cup sundried tomatoes (not in oil, soaked)
2 medium sweet tomatoes
1/2 Red pepper
1 cups cherry tomatoes
1 tablespoons fresh thyme
2 green onions
2 dates
2 stalks celery
Blend all ingredients separately, then layer in a small baking dish OR in mason jars like shown below!
You can also add a nut or mushroom meat layer.
Mix:
1 cup walnuts (or mushrooms) chopped
2 tbsp sundried tomatoes blended with:
1 tsp garlic
1 tsp paprika
1/2 tsp oregano
1/2 tsp parsley
1/2 tsp salt
