Have you ever had a craving for a piece of chocolate cake but you didn't want to go through the trouble of making an entire cake? I love cake but it always takes too much time and effort to make one, so I have found the perfect solution, a mug cake!
Ingredients :
- 2 tablespoons soft butter
- 2 tablespoons caster sugar
- 1 tablespoon light soft brown sugar
- 1 tablespoon cocoa powder
- 1 medium egg yolk
- 4 tablespoons self-raising flour
- 1/2 teaspoon vanilla extract
- pinch of salt
- 2 tablespoons chocolate chips or chopped chocolate
Method :
Place the butter in a mug and microwave for 10-20 seconds until melted.
Add the caster sugar, brown sugar and cocoa powder and beat with a fork until thoroughly combined.
Add the egg yolk and vanilla and beat together, then add the flour and salt and beat again until thoroughly combined and smooth. Stir through half of the chocolate chips.
Cook in the microwave for 50 seconds at 600W, 30 seconds at 800W or 25 seconds at 1000W. Scatter the remaining chocolate chips over the top and cook in the microwave a further 30 seconds.
Leave it to cool for 10 minutes (if you can wait that long).
I found the above recipe in the book "Mug Cakes" by Mima Sinclair. I really hope that you try and enjoy this recipe❤
