Last week I have shared with you the story of my first year of baking experience and I mentioned you that my upcoming project was making a wedding cake for a friend. That moment has just passed and MISSION ACCOMPLISHED! I made it, wohoooo.....
A week before the d-day, I started to read cake book, watch some tutorials in YouTube, ask my baker friend intensively to overcome my worries. Yes, I was very worried. The thing that feared me the most was the stacking. Even though, based on the tutorial and cake book, it should be fine if you follow all the instructions.
I am working partime every afternoon so I had to plan everything accordingly. I started making my first cake on Thursday night and the other two cakes on Friday morning. Then I made the buttercream on Friday night and it didn't stop there. There were still a lot of work to do :-D For the cake, I made two kinds of cake: Lemon Ginger Cake and Yellow Butter Cake. If you are wondering, what's around the pan, it's my DIY baking strips. It helps for having a flat-topped cake.
As for buttercream, I opted for Vanilla Swiss Meringue Buttercream as the basic buttercream, then I flavored it with white chocolate and honey. The White Chocolate Buttercream was for Lemon Ginger Cake and Honey Buttercream was for Yellow Butter Cake.
Saturday morning, I went to my favorite florist to grab some flowers that I put on the cake. I was very indecisive whether I'd choose for all white flowers or colored flowers. My partner wasn't helpful, he said: it's up to you. Both looks beautiful. So I asked the lady from the florist and she would give some colors to the cake. That's a good idea and I agreed. Here are some flowers that I put on my cake. I dont know the name of the flowers but roses and baby's breath :-D
There were 3 layers of each cake and buttercream between layers. Can you imagine the weight of the whole cake? It was super heavy. Each cake was already heavy so inserting dowels in the middle of cake was necessary. I inserted some dowels in the first and the second cakes. I didn't insert one long dowel that connected the bottom cake and the top cake. However, I Inserted one long skewer to connect the middle cake and the top cake to prevent the top cake collapse. It looked steady and I was quite confident that it wouldn't fall.
When you decorate your cake with real flowers, it's better to wrap the stems of the flowers with: posy picks, floral tape or plastic wrap to avoid direct contact of the flowers to the cake. I used plastic wrap because I didn't find any floral tape and it was too late for me to order posy picks online. The inconvenient of using plastic wrap is when you pull out the flowers, it may stuck inside the cake.
I was so happy seeing the final result. It was impressively beautiful. I have never imagined that one day I could make three-tiered cake. I am so proud of myself :-) There's still one challenge though: how to deliver the cake??? :-D We (my partner and I) brought the cake with us in Uber car. We put the cake on a cake stand and my partner just hold it on his thigh. My partner didn't want to put the cake in the box because he thought that it would be more complicated. As long as my cake is safe, I am okay. Luckily, our Uber driver was so nice, he drove slowly, very slowly and paid attention to the cake. The cake arrived at the venue safe and sound, phew...
As we entered to the venue, everyone was looking at us. They were all impressed by the cake. So were the bride and the groom. They were speechless and were not imagining that the cake would be so beautiful. They were so happy and I was happier seeing them happy. The cake was a gift for the newly wed and they said: it was the best gift for their wedding day.

Ha ha Indeed. She bakes when she is pissed off. :D :D Sometimes, like an encouragement to me to piss her off when I want cakes. When she is pissed off, she wants to waste her time on making cakes rather than on me. Lol. That's what she said.
When you have doubts, just bake! Hahaha.. I bake when I am happy or sad or angry. Baking makes everything better. She's absolutely doing the right thing. Releasing her anger in a good way :-D

Thank you my friend! I am sure you can make it. I always use Swiss Meringue Buttercream for any cake that I make and I never have a problem with it. It's also less sweet than American Buttercream.

Absolutely gorgeous cake, I'm impressed! I am starting a wedding floristry business this year and I feel I might have the same feelings of doubt as you did with your cake... was a good reminder to just keep putting our best foot forward and all will work out :)
