Baking is a delicate process. Even if you follow a recipe to a tee, things don't always go according to plan. While baking or cooking fail may bring people down, I'm sharing my experience with you and wanted to let you know that sometimes this happens and it's normal. When baking goes wrong, all you have to do is embrace yourself and learn from your mistake!
This is my second time making French Macarons after more than a year and I have failed!! My first time was way much better than this. I dont have the proof but I still remember that my macarons didn't crack like these ones. Most of the macarons that I've just made cracked. I followed the same recipe as the previous one but the result is different. My guess is the oven (I've got a different oven from the previous one) or I overmixed the batter.
There are few macarons that are in a good shape. I filled the good ones with chocolate hazelnut spread because I didn't want to make any buttercream or any other filling. I kind of had a feeling that it wouldn't turn out well :-D I guess I have to gather a good and positive thinking before baking.
Despite its not-so-beautiful appearance, the macarons taste good, with or without filling. I have to remake it soon and hopefully, my next macarons will turn out beautiful. In the mean time, I have to finish this batch first.

Hi my dear! Don't worry it happens with everyone, it's normal we cannot to make all the recipes successfully, but we have to accept the failure, but it looks so delicious and beautiful too even they cracked. Me never i try them, i have to try one day to make them, and then i will tell you the result.

Par expérience Putri, je trouve qu'il est difficile de faire avec une meringue française et quasi inratable avec italienne. Essaie et tu veras !
J'avais réussi la fois dernière. Je ne sais pas faire une meringue italienne car je n'ai pas de thermomètre à sucre. J'ai lu et regardé pas mal de tuto qu'il faut atteindre un certain degré avant de verser le sucre dans le blanc d'oeuf. En tout cas, merci pour le conseil.
Oui j'ai lu pour la fois dernière mais je les ai fait plusieurs fois avec la meringue française car je n'ai pas de thermomètre non plus :-) j'ai du les rater la moitié des fois et j'ai lu que c'était quasi inratable avec la meringue italienne. Beautiful photos! And oh my... why we don't have vegan and healthy French Macarons in stores? Damn, I want to try them. And for sure it's oven! I can say that I had similar problem, because few times I made cake, cookies or whatever with recipe, and after baking I recognized, that something went wrong! But we learn on our own mistakes :) Best of luck! :)
It's easy but tricky! I am sure you can do it by replacing the egg whites with aquafaba. My guess is the oven as well. I think my oven is hotter than the degrees it shows on the screen. Should have an oven thermometer and check it. Thanks for your encouragement @babettxx! :-)
No problem my dear! :) I was trying to make two times vegan meringues from aquafaba and xylitol. And I made it with recipe. Unfortunately, I have falied, They dissolved in oven :( Luckily, the mass was soo delicious haha and I'm wondering about another test :)
For meringue, you have to make sure that your bowl and whisk are grease free. Clean with lemon juice or vinegar before using. Also add a pinch of cream of tartar to stabilize them. I once made pavlova and they melt as well :-D Do you buy aquafaba and xylitol online or they're available in the store? I'm very curious about them. I want to try.
Yes yes, I know that it must be clean. Every single time I buy this stuff in store, You can find xylitol on section with healthy food in every big market and aquafaba on section with preserves :)

Those look beautiful and delicious anyway! I’m ‘hit or miss’ with macarons. I never know how mine will turn out. I used to make it using the French method but switched to Italian using my co-worker’s recipe as she makes it all the time and hers is always successful (with nice feet, etc). However, I’m ‘hit it miss’ with her recipe as well. Oh well ...! Anyway, they always taste good even if they’re not perfect. Last one I made was matcha-flavored. Delish! But they didn’t look perfect 😐. Will try again next time.

Most of my "failed" macarons are gone! My partner brought some for his friends and they said it's good despite the ugly look. I enjoyed them as well. So good! :-D
