Foolproof recipes: American fluffy pancakes

So you want to serve someone a nice breakfast. Maybe the chick you picked up yesterday in a bar and liked enough not to kick out of your house, maybe your longtime spouse, maybe you just want to treat yourself (you do you girl/boy! You. Do. You!)

Fluffy pancakes are the bee's knees. Fluffy pancakes are the food equivalent of having a real good sneeze. Fluffy pancakes are what I an orgasm tastes like. Guys, I like fluffy pancakes. 

So how do you make these cloudlike bastards? There are a LOT of ways to do this. Buttermilk recipes are fine, and create really fluffy pancakes, but to be honest, I never have buttermilk in the home and can't be arsed to buy some just for pancakes. So here's a nice little recipe without the buttermilk.

Some pointers:

- It may look really cheffy to sift your flour, but there's really, really no need. 

- If you don't have caster sugar, regular old sugar will work just fine (caster sugar is the powderlike stuff)

- You need to wait untill bubbles appear on the topside of the pancake, before flipping them. If you're afraid you'll burn them, don't turn the stove too high, and just peak on the underside with a ladle. Don't make the pancakes too big, no bigger than your handpalm, so you can flip them easily. 

- Don't have maple syrup? Try honey on your pancakes! I actually prefer them that way.
