🍝 The Best Pasta That Isn't JUST 'Pasta!' 🍝 (Raw/Vegan/Gluten-Free)

Whoever said healthy food is boring never met me! Impress your dinner guests with this SUPER EASY, delicious raw pasta recipe!

Forget the boiling of the noodles and get yourself some zucchini!

I LOVE pasta- I mean come'on- my dad is an Italian chef! But my body doesn't process regular spaghetti noodles very well. Do you know the feeling? I had to come up with something that would feed my cravings while making me feel incredible after eating it and that recipe is right here!

It's raw, it's vegan (dairy free) and it's gluten-free! YAY!

There are plenty of health benefits to eating raw, unprocessed, uncooked foods! But most people think of a salad when they hear the word raw. Let me just change that here! πŸ’–

Raw food is incredible because it retains its nutritional benefits from the source since we're not cooking them (applying heat) which can sometimes take away what the food offers in its natural state!

Did you know that raw garlic is anti-bacterial and anti-fungal?
Anytime I get sick or am feeling a little bit off I eat a fresh, raw clove of garlic instead of taking an antibiotic pill! It works, I swear by it! It's helped me fight off infection and illness many a time! I love incorporating its massively healing properties into my foods!

My favorite part about this dish is the RAWEMESAN!
It's like parmesan BUT it's raw, vegan (dairy free) and it's seriously delicious! Feel free to pour it all over your dish!

I've created a delicious raw zucchini pasta that is loaded with health benefits, are you ready to try it?

What you need:


Pasta:


  • Spiralized zucchini

Sauce:


  • 2 tomatoes
  • Β½ yellow pepper
  • 3 cloves of garlic (more or less depending on your liking!)
  • 3 bunches of basil
  • 1 tbs olive oil
  • 1 tsp oregano
  • 1 tsp salt

Raw-mesan


  • Β½ cup almonds
  • 2 tbs nutritional yeast
  • 1 tbs garlic powder (less if you’re not a garlic freak like me!)
    Note: I used garlic powder in my rawemesan to keep the consistency. It can get very wet if using fresh garlic but fresh is ideal!

What to do:


Noodles:

  • Take a washed, raw zucchini and spiralize it either through a processor, a hand spiralizer or a julienne peeler (the one with the spikes!)

Sauce:

  • Put all of the sauce ingedients into a food processor (do not cook any of them- simply wash them before use and add in!)

Rawemesan:

  • Soak the almonds the night before in filtered water.
  • Drain the liquid and either use now for a more creamy edition or dehydrate again for a more dry cheese.
  • Add all ingredients into food processor and pulse into small pieces.

Set up:


  • Start by making a pile of zucchini noodles on the plate.
  • Top with a big spoonful of sauce.
  • Sprinkle with rawemesan (and black pepper if you like it!)
  • Top with basil for a beautiful addition!
  • Enjoy and don't forget to share!πŸ’–

Hmmmm. Looks really good. I eat a lot of zucchini, but for my pasta I use quinoa based whole wheat spaghetti. I am not even remotely affected by gluten, it works for me.

I love the look of the rawmesan. I'll start soaking almonds right now. I use some fresh grated Parmesan but really prefer Myzithra. I'll give this a try.

I hope to get to the market today to buy the vegan burgers you suggested. I was out for a ride and haven't gotten that done. Hopefully today.

Ideally for a parmesan it would be dry and I know that. But it's so much better for digestion to soak the almonds so I do that and I personally love the texture! Let me know what you think. I just made some for my sandwich yesterday... soooo good!

It can be challenging yes but when given a delicious alternative, most people are willing to try it!

I didn't serve this to my father while he was here, it came after he left! He really likes cooked, warm foods so I need to work him up to this stage plus he doesn't like squash lol

He loves that I am passionate about food since he is a chef but he is perplexed by how everything I do in the kitchen is so different than how he was trained!

You know what? I live in Bali right? So it's constantly hot and I never would eat anything too hot because of that BUT Chinese medicine actually suggests opposite so I started drinking a lot of hot tea and soups and have acclimated to the weather! Crazy huh? 😍😘

Absolutely, I am also thriving on raw food :) I actually started adding raw garlic to my dinner salads a few days ago and it is really delicious as long as I cut them into very small pieces. To my surprise, I don't have a bad breath a day after - otherwise this new ingredient wouldn't become a regular in my food :D

Hahaha I hear you- there is a big trend here where I live of people going off garlic and onions for a few reasons but stench is one of them lol

I love raw garlic in my salads, have you tried blending it into a dressing?

Not yet, I am traveling longterm and therefore rarely get the chance to use a blender myself. But I bet it adds a great extra spiciness to any dressing :)

I know how that is, I was on the road for 4 years until just recently. I can't believe I finally settled. Beforehand I actually had a portable blending machine at one point :P

Raw garlic is the best. Since I was a little girl that is what my parents would give me when I was sick and I actually liked it, except the smell afterward.

Wowzers, this looks amazing @heart-to-heart, it certainly turns the boring salad idea right on its head. I don't have a spiralizer but this is making me think that I should have!

Do you have a julienne peeler? They work too! I got a hand held spiralizer from my dad when he got here, I really love it but it only works for thinner veggies! It's super fun! I recommend getting one but, you don't need noodles for this recipe, you could just cut the zucchini however and it would still taste delicious =D

Hmmmm, I dont think so. But I did just get a new food processor there are about 10 different attachments with it so perhaps there is one in there. I will have to go through the guide book and see.

Ya I betcha there is! I used to use my processor before I got the little hand one. My dad just brought it for me when he came haha it was the one thing I wanted from the modern world :P
