Quinoa has been getting really Popular the last few years. It is an ancient grain eaten by the aztecs and many other indigineous people all over South America. This grain is loaded with nutrients, antioxidants, essential fatty acids and protein. We combined it with a ton of veggies to bring it to another level of flavor and Nutrition.
Ingredients:
1/2 a bell pepper
1/2 a red onion
2 roma tomatoes
2 tbsp of coconut oil
1 carrot
1/2 a lime
2 minced Jalapeños (Optional for heat)🔥
1 cup of fresh string beans cut french style at angles
1 tbsp crushed ref pepper (optional)
2 cups of quinoa
1/4 cup chopped parsley
2 tbsp of thyme or marjoram finely chopped
2 tbsp of basil
1 chopped scalion
1/2 tbsp of garlic salt
1/4 cup of Olive oil
Put the 2 cups of Quinoa in 4 cups of boiling water for 10 minutes. Then add your String Beans and Carrots to the Quinoa along with any veggies that you would like cooked. After 10 minutes put cover on and let the quinoa swell and absorb the water.
While the Quinoa and your cooked veggies are cooking chop all of your veggies going in raw.
Once the Quinoa has absorbed all the water stick in the fridge to cool or put it in a cold water bath to cool off then add all of the raw ingredients, the olive oil, lime or lemon juice, and your seasoning salt and mix everything thoroughly, put back in the fridge for 15-20 minutes to cool and for all the flavors to marry together. Take out and serve cold. 😋😋

This looks great! My family is mostly Vegan with the exception of myself eating a little meat once a week when I go out to a restaurant :( ... I feel so much better and my family is incredibly healthy since going Vegan. Thank you for the recipe it looks so easy too :)
That is awesome to hear stories like you when people get healthier. I am not Vegan but I do eat mostly Vegetables in my diet. The only meats I ever eat are a few times per week and it is fish, chicken, eggs and butter.
Its getting so much easier these days to eat healthy that all we need to do is get past the idea we need more than a few oz or meat a week. I try to keep it down but I will eat chicken or eggs but try to keep it at once or twice a week at most. Thanks again for the recipe
