Lentils are one of those foods that imo really need a bit of the proper sprucing up to make them really delicious. They are pretty mild earthy flavored on their own and can be elevated by adding nice smoky flavors with garlic and other earthy spices. This is a delicious Lentil soup we filmed for Healthy Recipe Channel last year and it turned out amazing.
Ingredients:
2 smoked Ham Hocks
3 tbsp of fresh oregano or 1 tbsp dry oregano
1/4 cup of chopped Cilantro
1/4 cup chopped basil
8 cloves of diced garlic
2 bay leaves
2 cups of lentils
1/2 a bell pepper finely diced
1 cup of sliced carrots
1 tbsp of olive oil
2 cups of sliced baby portabella
2 cups of baby bok choy or spinach
6 strips of uncured bacon chopped into bits
1/2 red onion diced
2 tablespoons of feta cheese
Begin by boiling the smoked ham hocks for at least one hour to render the broth for the base of the soup.
Cook the bacon in your pot until all the fat melts and the bacon gets crisp.
Add in your Garlic, Onion, and Mushrooms and cook for 3-5 minutes.
Add in the rest of the ingredients including the Lentils. Cook for 3 minutes mixing it well and then add your bone broth from the Ham Hocks. Cover the soup and cook for 45 minutes to 1 hour until the lentils become creamy and dissolve.
Serve with the Feta Cheese Crumbles and minced cilantro.

I am a lentil fan through and through. Looks amazing! I know I have lentils in the pantry and I just made some chicken broth. Will have to see what else I have. Great recipe!
I used to not be a big fan because I had it cooked a few times where I think people just boiled them and threw some salt and pepper in lol. Once I started experimenting more with them a few years ago I really started warming up to them. Now I love them and eat them pretty regularly.
Love me some lentil soup! Maybe you'll find this weird, but I like to splash red wine vinegar on top. Try it and see what you think... My guess is that the feta in your recipe is the same idea - a kind of tart/sour/tangy to cut through the deep hearty soup. Red. Wine. (Vinegar).
Exactly, it gives a little salty savory bite to the earthy flavors from the lentils, I also drizzle extra virgin olive oil over them to add that flavor in I guess I would describe it as being a bit bitter. I love the flavor of olive oil on certain foods, I am always experimenting with it.
