Rainbow Bowl Ideas: Fajita Chicken and Quinoa

Yuuuuum!

I had never made a 'Rainbow Bowl' at home before... and lately I have being seeing cute pictures of them and I was like "I want to try!"

I mean I guess it's kind of like a glorified salad... but I am all down for salad at the moment. With Tough Mudder coming up for me and my husband in 3 months I am trying to eat healthy. I loved this Rainbow Bowl, I want to try out other versions, but this could be a great way to get your partner, kid or even yourself to have a nutritious and delicious meal!

Step 1: Base

For the base of the Rainbow bowl I want to experiment with different options like brown rice, basmati rice, oats (for a breakfast rainbow bowl maybe?), or quinoa...

Today, I used quinoa. I buy Quinoa & Co ready to eat quinoa pots (all my fellow Australians can get them from Woolies) and heat the quinoa in the microwave for 30 seconds!

Step 2: Colours!

The possibilities are endless... it was so fun walking around the veg section thinking about what I could put in my bowl. Today I went for spinach, capsicum, tomato, carrot and red onion. I also added sweetcorn after (I forgot about it at this stage haha)

Step 3: Protein

There are so many quick and easy options of different proteins you can add. You could make the Rainbow bowl veggie or vegan by adding things like tofu, or add meats or fish. Today I added chicken. I sliced up a chicken breast into thin strips and coated it in a little oil and fajita seasoning. Then I cooked it in my airfryer!

Add some lime to garnish to tie all the flavours together!

This Rainbow Bowl was super quick and fun to make, and really pretty to look at.

I will definitely try some different options with tofu, beef, salmon, tuna... etc for some healthy breakfast, lunch, or dinner options over the next few weeks!

My sister and I did it, it was certainly one of the most challenging things I've ever done! It will definitely kick your butt haha have a hot bath ready :)

mmmm you could make a tofu version :)

Or yummy vegetarian goats' cheese, cottage cheese, tasty cheddar, some beautiful puy lentils.... The choice is yours. 🌈☀️🌈
