Yield: 18 - 20 muffins
Ingredients
1 medium banana
1 medium avocado
2/3 cups honey
2/3 cups raw sugar (turbinado sugar)
2 eggs
1 cup milk
1/2 cup vegetable oil
1/2 cup water
2/3 cup cocoa powder
1 teaspoon soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1 1/4 cups whole wheat flour
1/2 cup oatmeal flour
1/2 cup barley flour (you can sub with more whole wheat)
optional: 100g (about 1/2 cup) chopped semi-sweet dark chocolate
Instructions
- Preheat oven to 350 degrees F (180 C).
- Mash banana and avocado in a large bowl. Add sugar and honey and stir well. Add all other ingredients and mix well.
- Spoon batter into greased muffin pan and fill nearly to the top. Bake for 18 - 20 minutes until center is cooked and edges are golden.
