Here’s me following a trend just for the heck of it again.
On a scale of one to ten how lame do you think that is? I mean, I don’t think of myself as being follower of the norm by any means, and way more often than not I stay as far from a fad as I can. However, I’ll admit that it’s a rarity, but sometimes the bandwagon gang knows their stuff, and I’m pretty sure this is one of those times. Avocado toast people, it’s where it’s at!
I think the craze started because avo makes a way healthier alternative to just about anything that would usually make an appearance on your toast. As you all know it’s an incredible super food, plus there’s the fact that it’s completely scrumdidly-YUM-cious! It’s like nature’s version of I can’t believe it’s not butter. Of course, I’m wondering if including cream cheese in the party negates the whole healthy thing, but it’s all in the balance right? Yeah, let’s go with that. I have a strict no-skimping-on-snacktime policy.
This barely counts as a recipe unless you count the fact that I made the bagels myself, but I’m really loving the fact that this is majorly simple right now. Of course, I am going to have to recommend making the homemade bagels, but if you’re trying to enjoy the simplicity of this, or you’re just looking for the perfect snack to throw together, then I understand that too. If that’s the case then just make sure to use some really good store-bought bagels for the job. You could use a slice of your favorite bread instead if you’d prefer. A doughy slice of whole grain seed bread would be delish.
So I did go with the wave on this one but I wanted to give my avo toast something of its own twist and with March being right around the corner I was thinking the green on green from adding pistachios would be both gorgeous and yummy. This is definitely how to put the fun back in functional snacks.

Ingredients
1 bagel (your favorite flavor), sliced (here's the recipe for homemade sourdough bagels that I used)
2 - 3 tablespoons cream cheese, softened
1/2 ripe avocado, sliced
2 tablespoons pistachios, chopped
3 - 4 teaspoons honey
cracked black pepper & sea salt

Made it just now ... Awesome! Texture is great.. Didnt have a bagel, instead i used a slice of sourdough bread.. Tried another one but instead of cheese i used butter and 2 thin slices of orange. Anyways thnx for the recipe.

Wow, this looks fantastic @gringalicious I love avocados and pistachios. I would have never thought of putting them on a bagel with honey though. I had something like it with ice cream in the past.
I have a question about your photo setup. Do you use any light modifiers when shooting like an umbrella or softbox or is this all shot held held with natural light? I'm just curious since you normally seem to have great lighting in all your shots. :)
Good question @rockjon. I always ALWAYS use natural light for my food photos but I do occasionally use a simple softener in the window or reflector on the side when necessary. Haha, my dad makes fun of me and calls me a food photography snob. I hope that's helpful, my friend!

I bet the pistachios are simply amazing in this recipe. I've never tried to add nuts to my avocado toast, but this sounds great. I bet the texture of both is just a nice combination.

Nice post, great photos as usual. But, where did you get the honey? Was it from a local beekeeper? Or was it processed/pasteurized off the shelf at the grocery store? ;)
Actually, this honey came from a friend who keeps bees in Llifen valley in Region 14 of Chile.
GOOD JOB GRINGA! That's what I always tell people to do. You don't know your honey unless you know your beekeeper.

This is a frightening yet delicious combination. You sir are an evil culinary genius. The avocado is so versatile.. I just made avocado chocolate pudding and I do not know how it came to be, that IT can only be described as "luxurious self indulgent treat"

I love avocados! We use them a lot in Brazil.
In Chile, we call them 'palta.' And, palta is huge staple, it is served at every meal, breakfast, lucne, once, and dinner
I love to make smoothie (vitamina) with them. Like in your receipe I didn`t try yet, but I will, it really looks delicia

I made a baked potato topped with mashed avocado, pistachio nuts, hemp oil, and Kalamata olives yesterday. It was very good, and quite filling. It's one of those things I make when I'm trying to use just whatever happens to still be in the pantry or refrigerator.
