How to prepare Chicken with Rice Caribbean

Will someone say a great job, chicken with rice :) Yes, but no! Each grain of rice is separate from the other, and at the same time it melts in the mouth and its taste is milky and tender, just great!

Chicken with Rice Caribbean recipe.

Necessary products:

5 chicken legs
1 teaspoon of salt
½ teaspoon chicken broth
1 spoonful of spice mixture of choice
1 teaspoon of smoked red pepper

3 tablespoons of oil
2 medium onions, cut into cubes
3 cloves of garlic, chopped or pressed
1 green pepper finely chopped
2 small bay leaves
2 cups of long grain rice
2-3 stalks of fresh thyme or 1 tablespoon of dry thyme
1 and ½ cups of coconut milk
2 ½ teaspoons of chicken broth or water
300 grams of black beans from a can
½ teaspoon of white pepper
salt and freshly ground black pepper to taste

Method of preparation:

For chicken legs, you can only use the upper part or targets cut in half if you prefer.
Wash the chicken legs well and dry them with a kitchen cloth. Season them with salt, your favorite mixed spices, pepper and smoked red pepper.


Place the chicken with the skin down and fry it in a moderately heated pan for about 3 minutes on each side. Be very careful, do not have to burn. Remove it from the pan and leave it aside as you prepare the rice.


Preheat the oven to 180 ° C.

In the meantime, place the rice in a large bowl, cover with cold water and use your hands to wash the nipples. Pour the water, then repeat two or three times until the water becomes clear.


Cut the onion, pepper and garlic finely.
Pour into a medium heated pan 2-3 tablespoons of corn oil, onion, pepper, thyme, garlic and satin until tender. They should not become golden, about 2-3 minutes. Then add the rice and fry it for 2-3 minutes. Add the beans, mix.


Place the rice and vegetables in a convenient baking pan, add broth, coconut milk, parsley and bay leaves. Mix and add the chicken.
Place the pan in the oven and cook for about 35-40 minutes. Try the chicken to make sure it is completely cooked.
Leave the rice with the chicken to cool for 20 minutes before serving.
