Waffle - RECIPE

It is a traditional and conventional lattice pie.

  INGREDIENTS   

1 3/4 c. unbleached, all-purpose flour

1/4 c. light brown sugar

2 tsp. baking powder

1/4 tsp. kosher salt

2 large eggs, separated

1 1/2 c. milk, almond milk, cashew milk, or coconut milk

2 tsp. cider vinegar or plain vinegar

1/4 c. unsalted butter, melted and at room temperature

1 tsp. vanilla extract (optional)

Toppings (Optional)

butter

syrup

fresh fruit

whipped cream

chocolate chips

nuts

  PREPARATION  

1.Heat the waffle iron until warm and ready to use.

2.Mix all of your dry ingredients into a large mixing bowl. We suggest using a sifter to sift the flour, sugar, baking powder, and salt together into the bowl.

3.Separate out the egg yolks, add them to the melted butter, milk, vinegar, and vanilla in a medium-sized bowl, and whisk. Add this mixture to the flour mixture and stir just enough to combine. Be careful not to over-whisk; there should still be a few small lumps left in the batter.

4.In a stainless steel mixing bowl, beat the egg whites until they are foamy. (This will make your waffles fluffier.) With a spatula, scoop the egg whites into the batter and gently mix until they are just incorporated. Again, you don't want to over-mix.

5.Spoon or pour the batter onto the waffle iron and cook per the manufacturer's instructions—usually about 2 to 3 minutes. If you want to customize your waffles, simply drop in a few ingredients—like banana slices, chocolate chips, or nuts—onto the batter before you close the waffle iron. And if you're making a bunch of waffles, put the cooked waffles on a baking sheet in the oven at 200 degrees to keep them warm.

6.Add toppings and dig in.
