One Bowl Easy Vegan Banana Bread

Hello to all the broke people like me that enjoy really delicious desserts that aren't expensive!

Currently I am craving some baked goods, maybe it's because Autumn is almost here, or maybe just because I enjoy sweet food that is not that unhealthy and I can eat it at breakfast!

If you haven't read my first post I told you that I live with a budget because I'm a student, so here is my first recipe that you will love because is cheap, easy, simple ingredients and obviously delicious!

Vegan Banana Loaf

INGREDIENTS:

  • 3 very ripe bananas (the more ripe the sweeter)
  • 1 cup of flour (I used regular flour)
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1 tablespoon of apple sauce ( optional, you can add more banana pureé or leave it without it)

Optional ingredients:

  • chopped nuts
  • vegan chocolate
  • dried fruit
    Be creative it's YOUR banana bread!

DIRECTIONS

  1. Preheat oven to 180°C or 350°F
  2. In a bowl, add your bananas and start mashing them with a fork until a pureé is formed (it's okay if there are a few chunks, it just adds more texture).
  3. Once mashed, add in the flour , baking powder, baking soda, and the apple sauce. Start mixing all together until it is a smooth consistency. Be careful of not to overmix.
  4. Place your mixture on a mini baking loaf pan, put in in the oven for 30-40 minutes or until a forks comes clean.

Notes: In the photos I used the double of this recipe to get a cake. I usually make this recipe for only just me but my friends came over and we had a little tea party.

Make sure to try it is really easy and delicious !
Next time I will bring you some autentic mexican food because the Independence Day is this month and there are a lot of dishes that are traditional and of course I will make them vegan!
