INGREDIENTS
· 4 large jacket potatoes
· 11/2 tablespoons vegetable oil
· 1 large onion, peel and slice it
· 200g of lean beef, cut it into strips
· 1 large carrot, peel and slice it into thin sticks
· 1 large courgette, wash, top, tail and slice it into thin sticks
· 1 red pepper, remove the cored and seeds and cut it into slices
· 3 tablespoons of soy sauce
METHOD
Step 1. Put oil in a large pan and heat,
Step 2. Add the sliced onion and beef strips to the oil you heat and fry, stirring it all the time, until the meat turn brown.
Step 3. Add the carrot, courgette and red pepper to the pan and fry stirring all the time, over a high heat until the vegetables are softened and the meat is cooked.
Step 4. Add the soy sauce and stir well
Step 5. Serve the stir-fry over the cooked jacket potatoes.
