I have been dramatically cutting down on carbs and sugar these past few weeks, but having young kids at home has proven to be a challenge for me. Pizza Friday was one such challenge. I googled myself into a coma but didn't really come up with anything that seemed to be easy and appealing to my minions. So, out of pure desperation, I reached out to one of my South African buddies who has been on a LCHF diet for 2 years and she sent me this recipe, which was an absolute hit. Even my fussy husband and eldest son enjoyed it!
Ingredients for the base are as follows:
170g grated cheese (I used mozzarella)
3/4cup almond flour
2 tablespoons cream cheese
1 egg
pinch salt to taste
1/2 tsp garlic powder (or any other herbs like rosemary, thyme etc)
Method:
- Melt the cheese, almond flour and cream cheese in the microwave. We have a microwave from the stone-age so on mine it took 2 minutes, but it would probably take much less on a snazzy new microwave.
After a minute of microwaving...
After 2 minutes of microwaving...
- Add the egg, salt and herbs/spices (in my case it was garlic). Mix with a spatula until well mixed.
- Roll out the dough between 2 sheets of wax paper. My friend stated this in BOLD CAP letters so I think this is an important step. Apparently it a shitty job to scrape the dough off a surface!
I only made 1 pizza as my friend said that it is quite rich and filling. We like our pizzas with a thin base so I rolled mine out quite thin, but I have it on good authority that it will cook through for those that like a thicker base.
- Prick the base all over with a fork to ensure proper baking. Pop the base in the oven for 15 minutes at 220C until golden brown. I then took it out and flipped it over to brown the other side for an extra sturdy pizza. Total oven time about 20 minutes.
- Then I placed a thin layer of homemade tomato sauce, cheese and layered some leftover minced meat of my low carb tacos that I made the night before. Topped all of this off with another layer of cheese.
- Then pop your pizza masterpiece into the over for another 5 - 8 minutes until the cheese melts. NOTE: ensure that all the toppings are cooked before placing them on the pizza.
Very easy, so easy in fact that even my husband could probably do it (if he could tear himself away from steemit.com).
Hope you enjoy this pizza as much as we did. 1 standard pizza was enough to feed 2 kids and 2 adults.

I had my doubts about a cheese based pizza, but it ended up being delicious! The base ends up nice a crisp, so you can pick the slices up without them flopping about.
1 Pizza was enough for 4 people, so it is quite filling too.
