Carl here from FML with another food blog. In this episode I’ll teach you how to make quick and delicious Takoyaki, which is one of my favourite Japanese street foods. Please watch my video below and read directions on how to make this delicious snack at home.
Ingredients
Takoyaki Batter
1 cup plain flour
2 eggs
2 cups of dashi (see how to make dashi below)
3 tsp soy sauce
Toppings
1 large Octopus Tentacle (500g)
1 bunch of Spring Onions
1 packet of Pickled Red Ginger
Equipment
1 Dutch pancake maker or similar
Directions
Prepare the Octopus
- Bring 2 cups of chicken stock, 1 cup of red wine, some herbs of choice and a few cloves of garlic to a low boil.
- Wash Octopus and add to braising liquid, making sure most of the octopus is submerged in the liquid.
- Cover and place over a low heat for approximately 35-45 minutes or until tender.
- When cooked remove the octopus from the braising liquid and submerge in cold ice bath. The cool water will stop the octopus from cooking and help to remove the octopus skin.
- Dice octopus into small cubes (about 1cm by 1cm).
Prepare Dashi Stock
- Bring 2 ½ cups of water to a boil over a high heat.
- Add 2 handfuls of bonito flakes to the water and boil for 2 minutes.
- Reduce heat and allow to simmer for a further 5 minutes.
- Strain stock (dashi) from bonito flakes.
Prepare the Batter
- Add 1 cup of all-purpose flour to a bowl. To the flour add 2 eggs, 2 cups of dashi, 1 tbsp. of soy sauce and a pinch of salt.
- Combine ingredients, mixing thoroughly and ensure that no lumps of flour are present in the mixture.
Making Takoyaki
- Switch on Dutch pancake maker after greasing with oil and add takoyaki batter. The holes of the Takoyaki batter should be overfilled to make nice spherical balls.
- Place a piece of octopus into each of the small holes and top the batter with picked red ginger and spring onions.
- Turn batter whilst cooking to form ball shape.
- Keep turning batter every so often to help form the ball shape.
- Take the takoyaki balls out of the Dutch pancake maker when golden brown and top with mayo, takoyaki sauce and bonito flakes.
Tips / Comments
To avoid consuming harmful MSGs which is sometimes an ingredient in store bought takoyaki sauce and some Japanese mayonnaise, I recommend substituting the takoyaki sauce with BBQ sauce or similar and Japanese Mayo with regular mayonnaise which is free of MSG.
It may not taste as good as the MSG loaded ingredients, but it will be better for you in the long run.
