It's called devilish because it's HOT HOT HOT!
Ingredients
Ofcourse we need also chicken wings. I used 1 kilo chicken wings = 9 pieces. Wash them first with cold water and remove feathers
Now if you have a food processor you can mix onion, garlic, tomato, galanga, ginger, thai peppers and lombok peppers.
Take a wadjan pan and add 1 or 2 table spoon of sunflower oil. Add the mixed ingredients from the food processor together with curcuma, salt and sugar.
After about 10-15 minutes (or like Indonesians always say: when your house smells good :-D) add the soy sauce, lemon leaves, chicken pieces and 800 ml water. Now here comes the difficult part.....it takes 1 hour and 15 minutes until the chicken is soft and 80% of water is decreased. So keep stirring every few minutes.
So, it takes about 1 hour and 15 minutes, right? After 1 hour, we have 15 minutes left, before we put the chicken in the oven. So we can turn the oven ( pre-heat) on 200 degrees Celsius on GRILL function. Grease a roasting pan with a little bit of sunflower oil. After the remaining 15 minutes are over, add the chicken wings in a roasting pan and some sauce over the chicken. Leave it in the oven for about 15- 20 minutes. Depends on how crispy you like the chicken to have on top. It's better to have a look every few minutes because every oven is different.
We have a lot of sauce over, we don't throw it away ofcourse!
While we grill the chicken in the oven, we can cook the rice using a rice cooker.
Now we are ready to enjoy Ayam Setan!
