What can be better than a 15 min salad made from thin slices of smoked salty salmon in oil, cucumber, spinach, quinoa and honey lemon garlic vinaigrette for brunch?
You will need:
♡ Ingredients♡
● smoked salmon
●baby spinach
●cucumber
●quinoa
●garlic
●lemon juice/ apple cider vinegar
●honey/ brown sugar
●dill
●white/black pepper
♡ How to ♡ :
In a pan add a little bit of water and a few tablespoons of quinoa, bring to a boil and in 5 minutes it should be done.
In a small bowl combine the minced garlic, a pinch of salt, pepper and oil.
Whisk them together and let them sit for 5 minutes.
Then take a big plate and place the baby spinach, cucumber, quinoa and top with salmon slices.
Finally you can then add some fresh dill, a tablespoon of honey into the garlic mixture and after you whisked them together you can pour it into the salad.
If you use smoked salmon you should pay attention to the amount of salt you put into the dressing, but if you use fresh salmon then you can taste the dressing and add more salt if needed.
If you love bread as much as I do then you can grill one slice of bread in the oven or in a pan and if you do, don't forget to massage the bread with a little bit for oil before grilling it and a little bit of garlic right after the bread is nicely done, hot and crunchy.
