TBT To My Almond Joy Cookies Recipe!

I made these again recently, and decided to update my post from a few years back and re-share it for TBT, as this recipe is too good not to know about! It’s so unique, delicious, and super easy to make with only 4 ingredients. I found the original recipe on Mom on Timeout’s website back in the day and of course I had to try it. I was not disappointed, and you won’t be either!

I personally love Almond Joy candy, so to have them in cookie form is like having the best of both worlds. This cookie is extremely satisfying. It’s not too heavy and has the best combination of ingredients. I deviated from the original recipe just slightly by adding a bit more almonds for an extra almond-y crunch.

These are a bit messy to make so I suggest investing in some good ice cream scoops to make your life easier. You can scoop them unto the cookie sheet as is, or use wet fingers to mold them into a neater shape. Either way, these cookies don’t really spread out when baked, so they’ll come out of the oven looking just as they did going in, except slightly browner.
