Introduction
There's something special about Sundays. Apart from going to church and listening to God's word, it is the fact that virtually almost every Nigerian home gets to cook and enjoy their sumptuous rice whichever way they want to. Rice van be prepared as: jollof, coconut, fried, stewed etc. This Sunday, I will be sharing with my steemit family my home made recipe for white rice and beans with chicken stew. Happy Eating!!!
Ingredients
1/2 kg chicken
3 cups of rice
1 cup of brown beans(You can also use white beans)
1/4 kg fresh tomatoes
3 fresh pepper
Salt to taste
Vegetable oil
4 bulbs of onions
Curry (leaf or Gino)
3 knorr chicken cubes
Tin tomato
Thyme
Crayfish
Recipe For The Beans
- Measure out and hand pick so as to thoroughly remove stones.
- Washed the picked beans and pour into a pot of boiling water.
- Allow it to parabolic thoroughly. Wash again.
- Add your sliced onion and salt to taste.
- Allow to boil till it gets soft.
- Set the pot down.
Recipe For White Rice
- Measure out desired quantity and wash thoroughly.
- Pour into a pot of boiling water.
- Allow to paraboli and wash.
- Pour back the washed parboiled rice into the pot and add salt to taste.
- Allow to boil till it gets soft.
- After which, you set the pot down.
Recipe For The Chicken Stew
- Wash the chicken.
- Boil after adding salt, onion and spices.
- Bring down when it is steamed and pour out the chicken stock in a clean bowl.
- Put another clean pot on fire.
- Pour in your vegetable oil and allow to heat.
- Fry the steamed chicken and set aside(you can also grill the chicken if you want to).
- Set the fried chunksof chicken aside.
- Pour in your sliced onions into the hot pot of vegetable oil.
- Allow to simmer. Add your blended paste of fresh pepper and fresh tomato.
- Allow to fry till the water in the tomato paste dries well.
- Add the tin tomato and boil thoroughly.
- Then add the chicken stock.
- Add your crayfish and other spices (Maggi, curry, thyme etc).
- You can serve with a chilled glass of your special drink as accompaniment.

Or you give them a hot water soak and then rinse them again?
I’ve never considered rinsing cooked beans, but I’ve heard that mentioned in other food blogs.
