SIMPLE INDIAN CURRY WITH EGG

A curry can be prepared quickly, the ingredients are cooked in the pan and mixed in a food processor, cook some eggs, then you have a perfect dinner.

2 PORSIONS

100 g full grain rice
1 piece onion
8 boats garlic
2 cm fresh ginger
2 pieces of red chili
2 tablespoons rapeseed oil
2 teaspoons garam masala
1 teaspoon turmeric
2 teaspoons poppy seeds
1 teaspoon salt
4 pieces of tomato
2 dl water
4 eggs
1 dl chopped fresh coriander
1 tablespoon juice of lemon

THIS IS WHAT YOU DO

Cook rice as directed on the package.
Peel onions, garlic and ginger and portion into coarse pieces. Cut the chili roughly. Have it in a food processor and run for a few minutes until everything has become a rough puré.
Stir the puree in a pan with oil and add spices. Chop tomato into coarse pieces and have on the pan. Boil for a few minutes until the tomatoes are tender. Have everything in a food processor again and mix it all with water.
Have the puree back in the pan.
Boil eggs 6-8 minutes and cool them under running cold water. Peel the eggs and split them into two.
Server curry hot with egg, chopped coriander, lemon juice and rice.
