Mexican Turkey Meatloaf

Who loves mexican food I think 99% of the world does, I know I do and so does my family.

What makes this meat loaf mexican is going to be the ingredients, we are going to use corn tortilla chips instead of bread so gluten free, red or green enchilado sauce instead of ketchup, and we are going to add a few other ingredients like nopales (cactus) to the mix.

This is a very easy recipe that takes very little prep time and you just pop in the oven and set the timer.

-2 pounds ground Turkey you could use ground beef if you like
-1 medium yellow onion fine chopped
-6 garlic cloves fine chopped
-1 cup nopalitos (bottled prickly pear) diced
-3 cups crushed plain tortilla chips, roughly crushed, I use Santitas
-2 eggs
-1 table spoon worcesteshire (contains gluten so sub for gluten free I use Wizards organic)
-1 can red or green enchilada sauce, either one works great. (La victoria brand or old el paso, they all work)
-3/4 teaspoon salt
-1/2 teaspoon black pepper
-2 tbl spoon fresh oregano chopped

Lets begin by getting your ingredients ready to go ingredients that need to be chopped, you can use a food processor for the garlic and onions, weighed out, eggs cracked etc.

Next in a bowls pour in 3/4 of the can of the enchilada sauce and reserve the rest for later, add the remaining ingredients and fold together gently until they are all combined. Place mixture in a 8x4 inch loaf pan or any pan that is oven safe and will give it some height.
Bake at 400 degrees for 30 minutes and remove from oven pour the remaining enchilada sauce over the meat loaf and cook for an additional 15 minutes. Make sure internal temperature reaches 165 degrees.

Serve with any sides you like,
