Recipe
Ingredients:
2 zucchini, grated
small bunch fresh cilantro, finely chopped
3 tbsp all-purpose flour
2 garlic clove, minced
1 egg or flax-seed egg for substitute
salt and pepper to taste
vegetable oil for frying
Method:
In a large bowl mix all the Ingredients.
Heat a non-stick frying pan over medium-high heat. Add 1/2 cup portions of the zucchini mixture and press to flatten. Cook for 5 minutes until base is golden. Flip over and cook for another 3 to 4 minutes. Repeat with remaining mixture. Serve with fresh green salad leaves and more veggies. Enjoy.
