I can't believe I haven't made it in such a long time!
It doesn't have many ingredients but the combination of the few flavors combine and create a great tasty and even addicting salad. :)
Its great for for those summer picnics, as you could prepare it a day or two before and store in the fridge, or even at home as an addition to any meal.
I made it today and was Simple delicious and healthy!
They are a great addition to any meal, nutty and earthy in flavor.
With high in nutrition and low in calories, they are the perfect legume to eat in salads, spreads, and even as a side dish to any meal!
Brown Lentil Salad - Recipe
@Cooknbake:
Ingredients:
1 teaspoon salt
1 bunch fresh parsley, chopped
1 medium red onion, diced (optional)
2 garlic cloves, minced
1 lemon, freshly squeezd
olive oil, to taste
salt and pepper, to taste
Parsley, finely chopped
Method:
-Rinse the lentils well and drain.
-Place in a small pot, add salt and cover with about 3 inches of water. Let simmer. Cook for about 20 minutes, until they become 'al-dente'. Do not overcook!
-Drain and place under cold running water (to stop the cooking process). Once cooled slightly place them in a large serving bowl and toss with remaining ingredients.
*Before serving: sprinkle on top chopped parsley and serve with a big smile! 😊

Thank you :) Nope, its just something my mom used to make sometimes with saturday meals and Im continuing the Saturdays tradition :) havent made it in a long time though! :) Its very simple to make . thank you for your comment @apisstrading🤗
I generally make soup or a curry with lentils but this salad looks so nice and fresh!

Thank you for your cpmment @theserene:) Its something my mom used to make as another side dish on the table. Especially with Saturdays meals:) I guess its pretty much her experiment and I snatched it from her 😉🤗 It really is nice and fresh ! Simple to make too !
