After last nights deep dish meatball ricotta pizza, I needed a much lighter meal. Today's menu is fresh burrata with arugula and tomatoes drizzled with good olive oil and a balsamic vinegar reduction.
This was a very satisfying, light meal paired with a sparkling Malbec rosé. Malbec seems unlikely for a sparkling wine grape, but when you want your rosé to show some real color and character, then Malbec's your best choice. I like mine crisp and dry.
