Hi there, my fault I edited it now and said the 30 minutes was optional to rest it as yesterday I did not wait the 30 minutes! I did save my other part of the cookie dough in the fridge so the next batch should be better, lol! There is a science to it as when you let the dough rest Chilling cookie dough for 30 minutes make a big difference. As the cookies bake, the fat in the chilled cookie dough takes longer to melt than room-temperature fat. And the longer the fat remains solid, the less cookies spread.
In addition, the sugar in the dough gradually absorbs liquid. If you bake the dough immediately, before sugar has a chance to absorb much liquid, that liquid remains “free” in the dough, and promotes spread.
Haha, I was just poking a little fun at you. Baking in general is a science. It's not a skill you just have all of a sudden & if you don't have certain ingredients or need to substitute or modify the recipe. ohhh man you better know what your doing!
And yes, kind of like home made burgers, you want to put em in the freezer for 20-30 min before you bbq them so they stay together better. I didn't realize it was bc of the fat and sugar interactions at room temp that were the main issue for cookies, however that makes total sense!
