Ingredients:
1 coconut (grated)
1 1/2 cup of warm water
2 tbsp. cooking oil
1 clove garlic (minced)
1/2 cup onions (minced)
1 chicken (about 1kl.) cut up
1-2 tbsp. curry powder
1 tbsp. chili powder
1 tsp. salt
1 tsp. vetsin
1/4 cup tomato sauce
Directions:
Add 1/2 cup warm water to the grated coconut. Place in cheese cloth and squeeze to get one cup of thick coconut milk. Set aside. Repeat using 1 cup warm water. Set aside. Sauté garlic and onion in cooking oil. Drop in chicken pieces, cook covered for 5 minutes. Measure curry powder, chili powder, salt and vetsin. Pour in thick coconut milk and tomato sauce. Simmer gently, stirring frequently until chicken is tender. A second cup of coconut milk may be added if needed. Dish should not be too dry. Serve with hot rice and accompaniments. Accompaniments are mango chutney, french fried onion rings, fried eggplant, chooped peanuts, crisp fried bacon chips and raisins.
