Banana bread is just one of those things that I LOVE for so many reasons! It's a great way to use up those over-ripe brown bananas (high-fives for less food waste!). It's also a delish treat that doesn't need to be loaded with sugar to feel like a treat! This bread is made with whole wheat flour for some extra fiber and nutrients. Butter/oil is substituted for almond butter for some healthy fats. PLUS... there is only 1/4 cup of honey to sweeten the whole loaf!
Here's what you'll need:
3 ripe bananas (the browner the better)
3/4 cup apple sauce
3/4 cup almond butter
1/4 cup honey
2 eggs
1 tablespoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups 100% whole wheat flour
1 cup dark chocolate chips
Here's how to do it:
- Preheat oven to 325 degrees.
- In a large bowl, mash bananas.
- Add the apple sauce, almond butter, honey, and vanilla. Mix until well combined, then whisk in the eggs.
- In a separate bowl mix together the cinnamon, baking powder, baking soda, salt and whole wheat flour.
- Add the flour mixture to the wet mixture, and stir until just combined. Then fold in the chocolate chips
- Line a loaf pan with parchment paper or oil all the sides with coconut oil. Pour the batter in and bake for 60-70 minutes, or until a toothpick comes out clean.
- Let cool, and enjoy with a little almond butter, ghee or just on its own!
*** Crumble a handful of pecans or walnuts on top for a little crunch and some extra chocolate chips for a little extra chocolatey goodness!
