Buckwheat is not much popular at our place but it is a good option for gluten free-recipe. Here I made sweet and nutty buckwheat flour and oats pancakes. It is gluten-free, and refined sugar-free as jaggery is used as a sweetener.
Ingredients-
- Buckwheat flour 1 cup
- Oats flour 1 cup
- Jaggery 1/2 cup or according to taste
- Nuts of choice
- Raisins 2 tbsp
- Cardamom powder 1 tsp
- Cinnamon powder 1/2 tsp
- Coconut oil/vegetable oil for shallow frying.
- Baking powder 1 tsp
Procedure-
- Heat 1 cup of water, dissolve jaggery and filter.
- Mix both flours and make a batter using jaggery solution.
- Add nuts, raisins and cardamom powder. Add more water to make suitable consistency of batter.
- Keep aside for 10-15 minutes.
- In a pan heat little oil and spread batter uniformaly. Cook until it turns golden brown. Flip other side and cook.
Serve hot with strawberry or chocolate syrup or any dressing of your choice
I didn't hear about this food before but I am glad to see that this is vegan recipe and I will try if possible at home.

I love buckwheat. Started to use it myself just recently and realized you can do so many meals with it! I like how cardamon gives your pancakes a nice Indian touch :)
