Who doesn't enjoy a good pork meal seasoned and cooked to perfection? Luckily pork is easy to make, and my mom made these often enough when I was little that I remember each step and ingredient like the back of my hand.
Ingredients you'll need for the Pork:
- 3 lbs of ground pork
- 1 8 ounce can of tomato sauce
- 1 egg
- 3/4 cup of finely chopped green pepper
- 2 teaspoons of salt
- 2 teaspoons of chili powder
- 1/8 teaspoon of ground pepper
Ingredients for Corn Bread Stuffing:
1 8 1/2 ounce package of Corn Muffin Mix
1/4 cup finely chopped onions
1/2 cup of finely chopped celery
1 tablespoon of butter or margarine
1 teaspoon of sage
1/4 cup of water.
- Making the Stuffing
First, you'll want to make the corn muffin mix according to package directions.
Let the corn bread cool, and then crumble.
Sauté the onion and celery in butter. Then stir in the cornbread, sage and water. Set aside.
- Directions to make Pork
Combine pork, tomato sauce, egg, green pepper and the rest of the dry ingredients being sure to mix thoroughly.
Split your pork mixture in half and place onto a sheet of wax paper, and form a 10x8 inch rectangle.
Take 1/2 of the corn bread stuffing and layer the cornbread stuffing on top, pressing lightly.
Using the wax paper roll in a jelly roll fashion to form a loaf and seal the ends.
Place seam side down on the rack in roasting pan.
Repeat with the second roll. If you don't have a large crowd to feed, place it in a freezer bag and place in freezer for another day.
Bake in the oven at 350 °F for 1 hour and 25 to 30 minutes.
Serve with roasted vegetables of your choice.
