Nothing says comfort food like a bowl of hot french onion soup after a long day of work. My mother made this for us when I was younger, along with her famous Polish mushroom soup! I've decided to share her amazing recipe and include an alternative for those vegan readers out there, so everyone can enjoy it!
- What you will need:
1. 3 pounds of peeled onions
2. ¼ lb of butter or margarine
3. 1 ½ teaspoons of freshly ground pepper
4. 2 tablespoons paprika
5. 1 bay leaf
6. ¾ flour
7. 3 quarts of canned beef bullion
8. 1 cup of white wine ( optional)
9. 2 teaspoons of salt
10. Swiss Cheese
11. French Bread
- Vegan Alternatives:
To make this recipe vegan friendly, simply replace the beef bullion with vegetable based bullion. Use animal by-product free margarine (I use the brand Smart Balance Light Margarine , but any vegan margarine will work). Finally skip the cheese topping or, if you'd like, use a vegan cheese alternative (i.e Go Veggie! Swiss Cheese Alternative)
- Cooking Instructions:
Melt butter in a large soup pot.
While your butter is melting, slice onions to 1/8 inch thick.
Add onions into the butter and sauté slowly for 1 ½ hours.
Add the rest of the ingredients; fresh ground pepper, paprika, bay leaf flour, and white wine and sauté for another 10 minutes. Add bullion and simmer for 2 hours.
Cool and place soup in refrigerator overnight.
- To Serve:
Heat soup in individual fireproof soup bowls.
Top soup with 3 1 ½ inch slices of French bread and sprinkle with Swiss cheese. Place under broiler until brown.
