Just getting you guys ready for cookouts!
This recipe is from "America's Best Vegetable Recipes" published in 1970 " Splendid salad to serve with pork chops, roast pork or baked ham." I fell in love with this recipe b/c it is really easy and I can play around with it, depending on the time of year I may use dried cranberries in place of raisins and/or sprinkle some walnuts over the top.
How long it takes to make can depend on if you want to chop everything by hand or you use a food processor.
Salad :
4 C. Shredded cabbage
3/4 C. Seedless raisins
1 apple, unpeeled and chopped
1/2 C. celery, chopped
1/4 C. Onion, chopped
Sauce :
1/4 C. Mayonnaise
2 Tb. Lemon juice
1 Tb. Salad oil
1 Tb. Sugar
1/2 T. Salt
1/8 T. Pepper
Combine cabbage, raisins, apple, celery and onion in salad bowl.
Blend together remaining ingredients. Add to cabbage mixture and toss.
Chill 30 minutes.
Makes 6 servings.
Takes about and hour and a half to make.
