Another trend I'm seeing is the grow tower. In fact, we have some family friends starting a farm of grow towers here in Austin, Texas. They are soil-free, I believe, relying on a spongy vessel held inside a stackable container that holds hundreds of individual plants. Sky high! Austin is the headquarters of Whole Foods, and statistically, our city pays more for food (groceries and restaurants) than any other U.S. city (accurate as of 2012 data). People here highly value fresh, organic, local produce, and we pay top dollar for it, so it makes good sense for solutions like the ones you're describing, as well as other innovations.
