Healthy Eating | Yucca Root? Mango Bread with Apple Goji Compote

What do Mangoes and Yucca Root have in common?

Actually, nothing…but hold on!


Today they are going to get up close and personal! We’re making a breakfast or snack using both and I think you’ll be surprised!


We all know what Mangoes are, but you may ask, what is a Yucca?


Yucca is a root vegetable which grows in subtropical climates like Mexico and South America. It is much like a potato, rich in carbohydrates, fiber and Vitamin C. Yucca is used to boost your immunity, and Native Americans have used Yucca to ease arthritis for many years. It is great for your skin and hair; you’ll find Yucca added to many shampoos and lotions. What a versatile vegetable!


Yucca can be mashed, fried or used in soups and stews, but today we’re trying something different! A relatively inexpensive vegetable, one medium root cost around 1 USD.

Mango Bread!


  • Yucca Root (1 medium)
  • Oatmeal (1 cup)
  • Chia Egg (1)
  • Mango (1)
  • Flax Seed (1/4 cup)
  • Cinnamon (1/2 teaspoon)
  • Garam Masala (1/2 teaspoon)
  • Cardamom (1/2 teaspoon)

This bread uses no refined sugar, dairy and is gluten free! We’ll use Chia eggs to bind the bread. But first we need to shred the yucca root! If you like, you can blend the Oats to make a fine flour, this will create a fine texture with your bread. It's up to you! Either way works!


Wash and peel the Yucca root and shred the yucca in your favorite food processor using the shredding blade. This root made about 4 cups of shredded yucca.

Blend the peeled Mango along with all of the spices in your blender until smooth and creamy. See the sweet Mango will give your bread a slight sweet mango-y taste! Yum!

Combine all ingredients with 3 cups of shredded Yucca in a bowl. Make sure everything is well incorporated. Sure, you can use your hands to mix!

You can either pour this in a muffin tin or cake pan, bake at 350 degrees for 30-40 minutes or until golden brown.

While the bread bakes, we make the Apple Goji Compote!


It’s fall and to me, that means apples! Applesauce, Apple butter, Apple pie and Apple Compote! I’ll probably drive you guys crazy with apples this fall.


I used

  • Fresh Apple (sliced)
  • Maple Syrup (4 tablespoons)
  • Cinnamon (1/2 teaspoon)
  • Ground Cloves (1/4 teaspoon)
  • Non-Dairy Butter (1tablespoon)
  • Dried Goji Berries (1/4 cup)

Combine all except Goji berries in a saucepan and simmer on low heat for about 20 minutes. The apples should soften nicely and your house will smell like a bakery! Add the goji berries and cook for another 10 minutes.

Now liberally apply your favorite Vegan Cream cheese and top with the amazing Apple Goji Compote!

So tasty, the bread has a slight mango taste, paired with the cream cheese and warm fruit! A true fall breakfast. Make them ahead of time and warm them in the toaster for breakfast! Adding the Yucca will keep you satisfied all morning!

Holy Crow. I'm just making my delicious (gack) low carb breakfast and you show me this? I'm dying here!

I am at least familiar with Yucca root. There's quite a lot of it in the vicinity. The Yucca isn't very happy in the real low desert where I live but you don't have to travel far to find it.

What a spectacular and exotic dish. Thank you for it, even if I can't have it. It's the stuff dreams are made of.

hahaha, you really made me laugh this morning! I'm sure you had a wonderful breakfast! We eat very low carbs but since the kids have been here and they eat a lot more than we do...carbs were necessary ;) Now back to the juices!

No way, bring on all of the apples you can muster. I’m such an apple cinnamon freak. Anything that has apples, apple sauce, cinnamon, nutmeg, Christmas, is a winner in my book :). I don’t know how you whip these fantastic treats up @birdsinparadise but you do so so well. I love your creations 😋

Oh yes! Christmas is the best for baked goods and candies. Last year I was able to send my great grandma half a loaf of chocolate chip butterscotch pumpkin bread. She devoured it with a huge smile. My mom took video of her eating it and giggling, then sent it to me. I cherish that she enjoyed it so much. We lost her a couple months after that. It’s okay though, she was 101 and very much ready to rejoin my great grandpa. I’m talking your ear off now, but yes, holiday cooking is my favorite too! I’m looking forward to your creations Mrs. Bird :)

I have never tried yucca and I have never seen it for sale here either. It looks like a good autumn dessert with those spices too xx

Apples in autumn? What better fruit can you wish for? Oh girl, I would easily serve it as a dessert instead of breakfast :) It looks so yum! I've never eaten the yucca root so can't imagine the taste but I bet it's delicious! :)

oh wow .. that looks incredible.. in ecuador the yucca bread is very common and usually eaten with a bit of cheese and with some fruit yogurt drink on the side .. it's like the common thing to eat 7pm on a friday night :D.

Yucca root looks delicious @birdsinparadise! What does it taste like, on its own? We have an indiginous root veggie here that is similar tasting to potato (I only know the Zulu name) but it is delicious. I think I'd use that as we don't get yucca in SA. Well done on the curie for another delicious post

The raw yucca tastes a lot like potato. I have been trying other recipes with it as I see it in all the markets. I haven't eaten it mashed yet, I'm interested to see what that tastes like. In taste wise it could be similar but in looks the one we have is called a Madumbi (not sure of the english word). It is almost like a hairy ginger on steroids. But I love the taste. Looking forward to your future yucca posts

Hi @birdsinparadise ! In my country, Venezuela, Yuca and Mango have two things in common: both are cheap and both are tropical vegetables so we eat a lot of both here. That's why I like your recipe so much. It is a very interesting idea and it looks delicious. I have not tried yuca with anything sweet, but I use it to cook salty dishes for lunch or dinner. My favorite recipe with mango is mango jelly. You just need green mangoes, I mean, still not mature. You cook the mangoes in water, then take out the pulp, and mix whith the same amount of sugar than pulp. Brown sugar or white, as you prefer. Then cook both until the mix is thick, about an hour. It is a very easy recipe, but requires permanent attention to the mix until it is thick. It is delicious!

You are killing me with that... It looks delicious. I say killing me, more like making me crave apples. I've been on a keto diet for 6 weeks now, and that awesome looking breakfast would not be on the menu. Plus I love apple.... well just about apple anything.

Thank you for such recipe, I have never heard about Yucca Root, actually on first picture my first thought was that it is a sausage. But obviously that is a vegetable. I like the idea of the ingredients and on your final picture it looks really delicious. I believe it is also quite nice and quick desert just in case if you have sudden visitors for cup of tea :)

ufff this if it looks divine, I am Venezuelan a country that is high consumer of yucca but let me tell you that it is the first time I see a candy like that, I find your recipe ingenious.

Here we eat yucca in the form of cassava that is an aboriginal bread, yucca parboiled and then fried, yucca parboiled only, all to accompany meals, not long ago I made at home for a very good season arepa of yucca that is like a bread widely consumed in various parts of South America.

We also use other flours or dry grains to combine with grated yucca because it lacks gluten which is good but lacks sponginess.

I have fallen in love with this recipe, when the mango season begins I will prepare it and pass you a picture of how I am, as well as I could prepare a recipe with yucca to share it.

But I have a question, where are you from? I see the mango a little wrinkled are you from Latin America?

if you lived here I would invite you to start yucca from my patio (I have planted about 6 bushes) and you yourself grab the mangoes from the tree in front of the house to prepare this delicious recipe.

Never heard of what a Yucca root is. But I'm willing to bet this recipe is as delicious as you say it is. I need to tinker with the recipe and substitute the Yucca root, maybe I can come close to the flavor XD

howdy there birdsinparadise! well this bread and compote mix has elements that I'm not real familiar with but they look totally amazing together! I've never had Yucca root but I'd like to now after reading about it and I love Mangos so this would be a fantastic breakfast.
