Hmmmm. Looks really good. I eat a lot of zucchini, but for my pasta I use quinoa based whole wheat spaghetti. I am not even remotely affected by gluten, it works for me.

I love the look of the rawmesan. I'll start soaking almonds right now. I use some fresh grated Parmesan but really prefer Myzithra. I'll give this a try.

I hope to get to the market today to buy the vegan burgers you suggested. I was out for a ride and haven't gotten that done. Hopefully today.

Yaaaa well you know what @bigtom13 I am tired of you rubbing all your American luxury in my face. I get it - you can get all of the cool stuff delivered to your door on Amazon ;) jeeze... way to make me wanna move back just to get really cool ingredients ;)

I'm not familiar with Myzithra but positive I couldn't get it here anyway haha

Ideally for a parmesan it would be dry and I know that. But it's so much better for digestion to soak the almonds so I do that and I personally love the texture! Let me know what you think. I just made some for my sandwich yesterday... soooo good!
