What a great list. Only one change I'd make. I don't use a scale. Portion control is the bane of skinny people.
I'd substitute a set of silicon based scrapers. I bought a set maybe a year ago and use at least one of them every day.
My knives aren't very fancy, but they are sharp. I use a steel regularly on my go to black iron knife, and the rest I sharpen while watching ball games. I have at least four sharpening stones, and use them. I even have a fish hook sharpener that works really good on things like scissors...
