What about the resources needed to support this though?

The energy and other resources needed to deliver what these crops would need up higher and higher, at this scale, can't be insignificant.

Even if you consider solar energy to power it, I see this as largely being a case of form over function. Architechturally sound, maybe, but I kind of shudder to think of what this type of setup needs to actually run now, versus a more practical re-distribution of real estate in urban areas to include some more traditional farmland.
