This looks delicious. I will have to try this. With the health benefits of beets I always wanted to try something different with them. Thanks for sharing the great recipe. Maybe now I could get my kids to eat them. :)

Maybe you could get the kids to give it a try. My little sister who is very, very picky even likes this. I make this probably once every two months and everyone in the family likes it. Great commenting @beccadeals, thanks so much
