On the weekends one of my favourite things to do is some baking. Cooking is a great way to stop being in your head and being in the momemnt.
INGREDIENTS
Plain flour, for dusting
3 cups self-raising flour
80g butter, chilled and cubed
1-1 1/4 cups milk
1/4 cup caster sugar
1 teaspoon vanilla essence
Jam, to serve
Whipped cream, to serve
METHOD
Preheat oven to 200°C.
Place self-raising flour into a large mixing bowl.
Add butter, and rub together with the flour using your finger tips.
The mixture will resemble breadcrumbs.
Make a hole in the middle of the bowl and pour in 1 cup of milk.
Mix together until the mixture forms a soft dough, adding more milk if needed.
Once combined place on a pre floured surface and knead gently.
(Don't over knead dough as scones will become tough)
Lightly dust a flat baking tray with plain flour.
Pat dough into a 2cm-thick round.
Using a 5cm round cutter, cut and transfer onto prepared tray 1cm apart.
(Press the left over dough together and repeat cutting steps)
Sprinkle tops with a little plain flour.
Bake for 20 to 25 minutes or until golden.
Transfer to a wire rack.
Serve warm with jam and cream.
