Honestly, I don't have much of an experience with aquafaba, only because all recipes I red were using tons of sugar. However, I do know they are using an additional ingredient to make it fluffy faster and maybe stay fluffy longer and that is arrow root or cream of tartar. Regarding the chocolate, maybe would be better to use a cacao or cocoa powder, but I am not sure.
I just checked few recipes online and they all use melted chocolate.
I will have to try make it myself and will see 😊
