Deliciously Healthy Brussels! Only 175 calories per serving! Say Whaaaat?!!

Let's face it. Eating Brussel Sprouts might not always be your first choice. I'm lucky enough to LOVE the taste of Brussels but am well aware that that's not the case for everyone, however, they are so darn good for you!

These lovely, tiny, cabbage- like treasures are jam packed with nutrients and can help your body in so many ways!

  • High in Fiber
  • Good for you Cholesterol
  • Antioxidants
  • Glucosinolates - (helps fight cancer)
  • Vitamins K, C and A
  • Cardiovascular Support

... Just to name a few

There is one fool proof way to make brussels extra delicious (or just simply tolerable for some) and that is cooking them with bacon...mmmm bacon....But let's face it, that holy bacon adds quite a bit of unwanted calories so I'm hear to share a recipe of mine that is only 175 Calories per serving AND it's as scrumptious as you can get without the bacon.

You will need:

  • 1 lb of Brussels
  • 1 tbsp of olive oil
  • 1/2 of a lemon
  • 1 tbsp of pine nuts
  • salt and pepper to taste

Preheat over to 400 deg.

Start off by washing and cutting the Brussels into quarters, then put them in a bowl.

Then pour in your olive oil and sprinkle some salt and pepper for seasoning. Toss it all together and then spread them all out on a pan.

Then cook them at 400 deg. for 15 minutes.

Once they are done, take out the pan and use a lemon half to drizzle lemon juice all over the Brussels.

Then, the most important part, broil them at 550 deg. for 2 minutes. This is what gives it that extra crispiness!

All you need to do now is plate it and top with 1/2 tbsp of pine nuts per serving!

I could seriously eat this multiple times a week but as I mentioned, I've always like my vegetables so I'm curious what you guys think! Let me know if you decide to try this recipe out, I always appreciate the feedback!
