Tasty healthy red salad! :) :)

After indulging on not-so-healthy (or the healthiest) food previous 10 days I felt like I needed a "cleanse" of tastes. And what is better than some fruits or vegetables? Or both? I started my day with a cup of green tea and later a very simple banana smoothie with some turmeric to enhance the taste.
For the lunch, I decided to have a huge beet-cucumber-tomato salad, which turned out to be a really great idea.
Here is how it all went.....

It all can be according to your taste. However, I would recommend 1 big onion, 2 beets, 2 tomatoes, 1 cucumber.

First chop some onions and tomatoes.

...mix them...

Add grated beets and cucumber...

For the dressing, I used 2-3 tbs of vinegar and 2 heaping tbs of mustard. (Adding sweeteners like rice or agave or maple syrup is highly recommended as well)

...and for the end add some cilantro for some extra freshness. ;)

Thank u so much for posting this! I have giant red beets at the moment and I have already made pickled beets. I have so got to make this... I've never seen a recipe like this for beets before

My dear, it is always wise to go for a good cleanse after a long indulgence on unhealthy meals.

True that! But what is even better after years of good food my body itself starts feeling a bit different on unhealthy, fast food and craves something better. You just can't deny good feeling that remains in the body after eating fruits or vegetables :)
