Today, I want to share the succulent, colorful, fresh, healthy and above all very easy to prepare, roasted beet hummus recipe. This vibrant middle-eastern condiment couldn't be easier; few ingredients in the food processor and let the magic be! Roasted beets add a delicious twist to the traditional hummus and you can serve it with veggie chips, crudités, pita chips or tartines. I had mine on a toasted slice of pain de campagne, topped with chèvre, olive oil , walnuts, coriander and red pepper flakes. Simply, amazing!
Roasting beets takes a lot of time (1-2 hours). If you are in a hurry, don't panic! You can use canned beets or boil them until tender
Ingredients:
- 1 chickpeas can
- 3 small beets
- ¼ cup water
- 2 tbsp good quality tahini sauce
- ½ tsp salt (or to taste)
- ½ tsp cumin powder
- 2 pressed garlic cloves
- Juice of one lemon
- 2 tbsp extra virgin olive oil
Direction:
- Heat oven to 350°C.
- Wash your beets and place on parchment paper in a baking sheet.
- Drain chickpeas then rinse with cold water.
- Place all the ingredients in a food processor.
- Blend for 3 minutes.
- Scrape the sides and blend for 2 minutes. Scrape again and blend for 3 more minutes or until very creamy.
Totally in love with the vibrant pink color of this roasted beetroot hummus! Doesn’t it look pretty?
