Healthy Chocolate Peanut Butter Overnight Oats (vegan option)

Hey foodies!

At the moment, this is my favourite make-ahead breakfast recipe if I want to eat something cold in the morning which is perfect for summer.

I developed this recipe by trial and error. I wanted to create high-volume overnight oats that doesn’t require much time to prepare. At the weekend, I prepare a bunch of the overnight oats, so I can grab one in the morning during the week and just eat it. It’s so quick. By adding the boiling water before the milk and chia seeds, the oats puff up nicely. Because of that, you get much volume for a litte amount of oats which will help you stay fuller for longer. The consistency is like a thick pudding which is great for me. Let me show you how it works!

Healthy Chocolate Peanut Butter Overnight Oats

Ingredients:

  • 1/3 c (30 g) whole rolled oats
  • 1/3 c (30 g) quick-cooking oats
  • 1 c (250 ml) boiling water
  • ½ tbsp (5 g) cocoa powder
  • 1 pinch salt
  • 1 pinch vanilla bean, grounded (or a splash of vanilla extract)
  • 2/3 c (150 ml) milk (or plant-based milk to make this vegan)
  • 1 tbsp (10 g) chia seeds
  • 1 tbsp (20 g) natural peanut butter
  • sweetener of choice (I use no-calorie sweeteners)

Directions:

  1. Add the oats into a mason jar. Pour in the boiling water. Let it soak covered for approximately 5 minutes.
  2. Add the cocoa powder, salt and vanilla bean and stir.
  3. Add the milk and chia seeds and quickly stir, so the chia seeds doesn’t clump together.
  4. Add the natura peanut butter and sweetener of choice and stir. Add so much sweetener as you prefer (I use no-calorie sweeteners equivalent to 1 heaped tbsp [25 g] of sugar).
  5. Cover the mason jar with a lid and rest preferably over night. Enjoy!

Yum! I used to make overnight oats with apple, cinnamon and raisins, which was sooo delicious! now, I just make breakfast in the morning with yoghurt, fresh fruit, oatmeal and nuts :-)
