Today I made Larb with ground lamb. Normally in Thailand this dish is made from pork, chicken or even beef but as I am in Germany I did it with lamb today and I can spoiler already, it taste really good!!!
What you need:
- 300 grams (1 pound) minced lamb
- 2 tbs of toasted sticky rice (khao kua)
- 1/2 - 1 tablespoon of chili flakes (prik bon)
- a pinch of sugar
- 1/2 tablespoon of fish sauce
- Juice from about 1-2 limes
- 1-2 shallots
- 2-3 lime leaves
- 3 - 5 spring onions
- About 15 leaves or so of fresh mint
- lettuce, cucumber or any other green of you choice to garnish
How to cook it:
- Add a bit of oil to a pan and fry the lamb till its fully cooked but still juicy, then take it of the heat.
- Mix the lamp with the toasted rice and the chili flakes
- Add sugar, fish sauce and lime juice (2 limes will be quite sour, add 1 first, taste and add more if you want to)
- Then add sliced shallots, finely chopped spring onion, very thin sliced lime leaves and the mint leaves.
- Give it a good mix to make sure the lamb is coated with the seasoning.
- Garnish and serve with sticky rice or rice of your choice.
