I found some really nice summer veggies at the farmers market and my local fish monger had freshly caught red snapper. I decided to make a simple corn salad, with onion, asparagus and heirloom tomatoes and paired that with a crispy skin red snapper filet. The last thing it needed was a sauce, so i made a green curry emulsion with green curry paste, grapeseed oil and some fresh herbs. bon appetit!
