Gluten-free pancake express recipe

*Here is my gluten-free pancake express recipe. Very few ingredients, 10 minutes of preparation and 3 minutes of pancake cooking, it is certainly one of my quickest recipes and the easiest to cook for breakfast or an improvised snack. I take the opportunity to serve them with seasonal fruits or with maple syrup ... or both together, as for my greedy son.

GLUTEN-FREE PANCAKE EXPRESS RECIPE


(Express pancake served with maple syrup)

Preparation time: 10 minutes, baking 2 to 3 minutes per pancake (my recipe is for 7/8 pancakes)
INGREDIENTS
• 90 g of complete rice flour
• 1 teaspoon of powdered sugar (5ml)
• 1 pinch of salt
• ½ teaspoon baking soda (2.5 ml)
• 1 egg
• 1 tablespoon (15ml) of rapeseed oil
• 125g whole yogurt
• 1 tablespoon of grapeseed oil or melted butter to grease the blini pan.

PREPARATION:

  1. In a large bowl, combine the "dry ingredients": rice flour, sugar, salt and baking soda.
  2. In a medium bowl, combine the "moist ingredients": egg, rapeseed oil, yoghurt. Add the wet ingredients to the dry ingredients and mix with a spatula.
    The dough will look very thick.
  3. Heat a small blini pan under a medium-low heat. Lightly oil the pan.
  4. In the pan, put a large tablespoon of dough, spread it out and flatten slightly with the back of the spoon. Cook until golden brown is formed on each side, just under 2 minutes.
    Serve with fruit, maple syrup, jam...
    Note: I use the "de Buyer" pan 12cm in diameter.
