One: The altimeter measures altitude over a fixed level (i.e, the earth), hence since pilots are always correcting to be at the right altitude, the plane will follow the earth. The instrument uses atmospheric pressure to determine altitude.
Two: Yes planes and ships are surprisingly similar in the sense that they are both objects moving through a fluid. To describe an objects movement through a fluid you need the objects Reynolds number and the fluids density and viscosity (as you mentioned). This applies for a ship in water and a plane in air, however ships remain above the sea because of buoyancy and planes stay in the air due to fluid pressure. The pressure of the fluid below the wing is greater than that above the wing; due to speed, shape & atmospheric pressure.
